The best way to play, I have found, is by grinding bottom as a default position. This allows you to jump upwards at any time to collect coins or to avoid danger or to catch a clamshell or seastar. From this position, I wait until I am within jumping reach of a coin formation; then jump upwards.
Sometimes my purpose is simultaneously to gather rainbow colo(u)rs that result in invitation of the birds. If so, I let the jump complete normally. Otherwise, I tap the screen just before the jump completes. This prevents a bird-colo(u)r from appearing.
Tip: the only time when it is guaranteed safe to complete a full trajectory jump is at the start of a round; at the start of a coin formation; or for some distance after completing a bird-weave.
